Excellent topic! So far my absolute favorite is smelling salts.....which brings you back to life for one more attack.

From top to bottom:
1. Patch No 1 vs Spurring knobs
I originally had a 50% chance of first attack, which came in very handy. I have since changed it to 30% chance to attack twice in a row. It's questionable which is better, but I have taken the latter given that it can happen at any time during a fight. Having the first attack, obviously, can only happen on the first attack, and then it's unclear if it's really offering that much advantage. A twice in a row attack can make all the difference.
2. Leather patch vs Glitter powder
Reducing damage by 25% against a skill increase of 1-5%. Should you have 1,000 of a stat, a 1% increase would be 10. Is that really of benefit? Is an extra 50 (5%)? I'd opt for the former, but then the odds of it happening are extremely low (1-5%). At least with the latter, you're guaranteed those extra points.
3. Air cushion vs Lube
Reducing damage or dodging a hit. Hmm, dodging certainly sounds better (reduction is only 40%). It's max is 15% chance vs 20% chance, but overally I'd go for the dodge.
4. Spanish fly vs Cotton balls
Decreasing the critical hit chance of your opponent by 1-5% is, in honesty, negligible. Having a max 15% chance of reducing damage by 75% is certainly the better option.
5. Euphoriant vs Smelling salts
Needless to say, a 60% chance to attack twice after a critical hit is handy, but when faced with a 100% chance to come back to life, I'd always elect for the latter. I do indeed have 100% chance to come back to life, and it has led to my winning more times than I would care to count.
6. Sparkling diamond vs Metal spikes
Unclear on this one. I currently have a 17% chance that my crit causes 50% more damage. I have an item of clothing that has a 20% chance to "immediately add 50 of the suffered damage..." but it is unclear what this is supposed to mean. I'll test it later, but is it saying I have a 20% chance to add 50 hit points after a crit? What will 50 hit points accomplish? If this is the case, stick to the metal spikes at all cost.
7. Foil vs Sticker
A 1-5% chance of throwing back a quarter of the damage or a max 30% trophy penalty reduction. I am not entirely sure what the latter means, precisely. As it stands, I am stuck with a 2% chance of throwing back damage. I will get to this shortly.
8. Toilette vs Duct tape
A max 15% chance for a double attack (stun) or decreasing your opponents dodge by a max 10%. I'd certainly elect for the former.
9. Rivet vs Plastic balls
A max 30% chance to deal out extra damage over 4 rounds against a guaranteed max 20% increase to missile damage. If missiles do 200 damage, for example, you're talking max 40 extra points (every hit). The extra damage, 45% of the triggering hit, can be substantially more. I'd go for the former.

Problem with a lot of these refinements is the translation though, the descriptions certainly don't give you all the info about how they work, some of them even give different descriptions under different circumstances.
Also, the #9 in Snakeystew's post, Rivet vs Plastic Balls, if the duel lasts longer than 5 hits and you have missiles on, the Plastic Balls has already done equal damage, assuming you proc'd Rivet on your first hit.
However like I said those descriptions aren't trustworthy x)
